At the forefront of the sushi industry, Oishi has opted to break away from tradition and introduce healthier sugar-free sushi rice. “Traditional sushi rice is prepared with the Japanese short-grain rice, rinsed five times, and then mixed with rice vinegar, salt and sugar. Japanese chef and restaurateur Nobuyuki Matsuhisa, of world-renowned Nobu, was one of the first sushi chefs to replace sugar with Monk Fruit” explains co-founder Daniel di Trapani.
Monk Fruit is a zero-calorie and natural alternative to sugar – native to Southeast Asia, it takes its name from the Buddhist monks who first cultivated the fruit, using it to make sweet and cooling drinks in the hot Asian summers.
