Ingredients:
- 1 pack of Macro Mixes Vanilla Protein Pancake Mix
- 70g melted butter
- 2 eggs
- 225ml milk
- 200g blueberries
Method:
- Preheat your oven to 175°C (155°C for fan ovens) and grease a 20cm round cake tin.
- For the Crumble Topping: Set aside 83g of the Pancake Mix. In a bowl, combine with 40g melted butter and 2 tbsp warm water. Mix until slightly moist and cohesive. Reserve for topping.
- For the Sponge: In a mixing bowl, blend the remaining Pancake Mix with eggs, milk, and 30g melted butter until smooth.
- Pour the batter into the prepared tin.
- Toss blueberries in a tablespoon of flour and distribute over the batter. Sprinkle the crumble topping evenly on top.
- Bake for 20 minutes, then cover with foil and bake for an additional 25 minutes.
- Let cool before removing from the tin. Slice and serve with yogurt, cream, or ice cream. Enjoy!
