• With Heritage Day (Braai Day) coming up soon the call to purchase expensive proteins for your family braai day might make you feel a little pressured. Do not fret there are amazing cheaper options out there for cash-strapped South Africans.   

    The Competition Commission’s Essential Food Pricing Monitoring Report has revealed that dry beans are of the cheapest protein sources in South Africa coming in at R0,32 per gram. The good news is that eggs are still the cheapest animal protein source at R0.48 per gram. Eggs are VAT (value-added tax) exempt, making them extra affordable.  

    Get yourself and your family out into the spring sunshine and serve up some eggstraordinary braai sides made with lekker, local eggs. Put eggs on the braai table with a delicious Volcano Mealie Bread filled with oozing cheese and served with tomato-chilli jam and jammy eggs… got your mouth watering yet? 

    And how about making good use of that leftover braai wors with our Grilled Mieliepap Cakes with Chakalaka Eggs – oh so yummy… 

    So not only are eggs delicious and affordable but they also boast loads of nutritional benefits including the fact that they contain protein and just the right mix of essential amino acids needed by humans to build tissue. 

    Eggs are surely one of the biggest necessities in many traditional South African recipes, for any meal, any time of the day. They are also a healthy diet food-source for all ages, placing them firmly at the top of the ingredients list of everyone’s Heritage Day celebrations. 

    Now for the other egg-ssential Heritage Day egg recipe!

     Microwave Volcano Mealie Bread

    Serves 8 as a side

    Preparation time: 5 minutes

    Cooking time: 15 minutes

    Ingredients:

    • 420 g tin creamstyle sweetcorn
    • 2 eggs
    • 15 ml (1 tbsp) sunflower oil
    • 15 ml (1 tbsp) sugar
    • 5 ml (1 tsp) salt
    • 500 ml (2 cups) self-raising flour
    • 250 ml (1 cup) cheddar, grated

    Method:

    1. Combine the sweetcorn, eggs, oil, sugar and salt. Stir in the flour. Pour into a 21 cm silicon ring cake mould.
    2. Microwave for about 8 minutes or until a testing skewer comes out with a few moist crumbs. Turn the bread out onto a microwave safe serving dish.
    3. Sprinkle the cheese over the top of the bread and into the centre. Microwave for about 3 minutes or until the cheese has melted. Serve immediately.

     Serving suggestions:

    • Use a blow torch to char the melted cheese, if you like.
    • Enjoy as a braai side or serve with butter, tomato-chilli jam and jammy eggs as a starter.

    Grilled Mieliepap Cakes with Chakalaka Eggs

    Serves 4

    Preparation time: 10 minutes

    Cooking time: 40 minutes

    Cost per recipe: Serves 4 for under R100

    Ingredients:

    • 1 L (4 cups) chicken stock
    • Salt and pepper
    • 310 ml (1¼ cups) maize meal
    • 5 ml (1 tsp) oregano, finely chopped + extra
    • Olive oil, for brushing
    • 410 g tin chakalaka
    • 4 eggs

    Method:

    1. For the pap cakes, bring the stock and 2.5 ml (½ tsp) salt to a boil in a medium saucepan over medium heat. Slowly add in the maize meal, whisking continually to prevent lumps from forming. Cover and cook for 15 minutes. Stir with a wooden spoon and cook, covered, for a further 10 minutes or until cooked. Stir through the oregano.
    2. Press evenly into a 23 cm square on a greased baking tray. Cut into 4 x 11 cm rounds with a cookie cutter.
    3. Heat a splash of oil in a frying pan on high and grill the pap cakes for about 2 minutes on each side or until golden.
    4. Meanwhile, heat the chakalaka in a large frying pan on medium until hot. Make 4 holes in between the mixture and break an egg into each. Cook for about 5 minutes for soft yolks or until eggs are cooked to your liking. Season with salt and pepper. Serve with the pap cakes and garnish with extra oregano.

    Optional:

    • Use leftover Braai Day boerewors or fry 400 g boerewors and slice before adding the chakalaka.
