• Iced green tea & cucumber sipper

    Summer is here! Start off with this refreshing Iced green tea & cucumber sipper drink.

     PREP TIME 5 min + refrigeration | MAKES 1 litre 

     

    INGREDIENTS

    • 2 green tea bags
    • 1 tbsp honey
    • Crushed ice
    • ½ cup cucumber juice
    • 1 tbsp lime juice
    • ½ cup mint leaves
    • 1 mini cucumber, sliced into ribbons
    • ½ pink lady apple, thinly sliced

     

    METHOD

    PLACE tea bags and 3 ½ cups boiling water in a heatproof jug and brew for 5 minutes. Discard tea bags.

    STIR  in honey until dissolved. Refrigerate the tea until chilled.

    WHEN ready to serve, half-fill a large jug with ice, then add cucumber juice, lime juice, mint, cucumber ribbons, apple and chilled tea. Stir to combine and serve.

     

    FOOD TEAM TIP: You will need to juice about 260 g cucumber to get ½ cup juice. If you don’t have a juicer, use a blender, then strain the mixture through a fine sieve.
