The Johannesburg Marriott Hotel, Melrose Arch proudly introduces Chef Melusi Twala, a culinary visionary whose recent triumphs have cemented him as a force to be reckoned with in the South African food scene.
As the chef at Keystone Bistro, Chef Melusi brings his passion for cuisine and innovative dining experiences to the forefront, redefining what guests can expect at Marriott Melrose Arch’s signature restaurant.
Chef Melusi’s culinary journey reached new heights in June 2024, when he participated in the prestigious Chef of the Year provincial competition. After securing a victory at the provincial level, Chef Melusi was invited to take part in the highly challenging plant-based category, a competition that required immense creativity and innovation.
“Plant-based cuisine demands a different level of thinking. It’s about pushing boundaries, creating something unique, and doing so with the restriction of using only plant-based ingredients,” said Chef Melusi. “It was an exciting challenge, and I was thrilled to excel in this space.”
Despite the demands of his new role at Keystone Bistro, where he has been tasked with curating a fresh, dynamic menu, Chef Melusi managed to balance his professional responsibilities while preparing for the Chef of the Year finals. Held on October 9, 2024, the finals presented numerous obstacles, including ingredient shortages that forced Chef Melusi to think on his feet and demonstrate his resilience.
Through his unwavering determination, Chef Melusi was crowned as the winner of the 2024 SA Chef Plant-Based Chef of the Year competition. His ability to create a compelling plant-based menu that exceeded expectations has set a new standard for Keystone and the Johannesburg dining scene.
Reflecting on his journey, Chef Melusi shared, “The competition was tough, but my passion for food and my love for the art of cooking carried me through. Cooking, for me, is not just a profession – it’s an art that requires the discipline of science.”
The 2024 SA Chef Plant-Based Chef of the Year competition, in partnership with The Plant-Powered Show and the South African Chefs Association, is a landmark event in South Africa’s culinary calendar, promoting plant-centric gastronomy and sustainable living. Chef Melusi’s achievement not only highlights his immense talent but also Keystone Bistro’s commitment to culinary innovation and mindful eating.
At Keystone, Chef Melusi brings this philosophy to life, offering guests a dining experience rooted in sustainability, creativity, and the art of diverse cuisine. His new menu reflects his passion for fresh, locally sourced ingredients and his dedication to elevating dining in South Africa.
Visit Keystone Bistro at Marriott Hotel Melrose Arch and embark on a culinary journey like no other, where Chef Melusi’s visionary creations take center stage.
