• Braaied prawns with chilli lime dressing

    PREP TIME 20 minutes | COOK TIME 10 minutes | SERVES 4 

    INGREDIENTS

     CHILI LIME DRESSING 

    • ⅓ cup lime juice
    • ⅓ cup lemon juice
    • ½ cup olive oil
    • 2 garlic cloves, minced
    • 2 tsp caster sugar
    • 2 tsp sea salt flakes
    • 1 green chilli, sliced thinly

    THE PRAWNS 

    • 1 kg large prawns, cleaned and halved lengthways
    • 2 fennel bulbs, trimmed and sliced thinly
    • 250g mini cucumbers, shaved into ribbons
    • 6 radishes, sliced thinly
    • ¼ cup coriander

     

    METHOD

    CHILI LIME DRESSING 

    COMBINE all the ingredients together in a bowl and mix well. Set aside.

    THE PRAWNS 

    ADD prawns and half the dressing to a bowl and toss to coat. Cook on a heated grill or braai for a few minutes until just changed in colour.

    PLACE fennel, cucumber and radishes on a serving plate and toss gently to combine, add the prawns and drizzle with remaining dressing.

     

    FOOD TEAM TIP: Use a vegetable peeler to thinly cut the cucumbers into ribbons and radishes into slices.
