Broccolini and spicy peanut oil
Ingredients
- 3 garlic cloves, minced
- 1 tsp cumin seeds
- 2 tsp doubanjiang or sambal oelek
- 1 tbsp roasted peanuts, chopped
- 4 tbsp olive oil
- 250g tender stem broccoli, washed
- Salt and freshly ground black pepper
- ½ reed onion, finely sliced
- Sesame seeds, toasted
Instructions
HEAT 3 tbsp of oil in a small pot until warm. Add the garlic, cumin, doubanjiang/sambal oelek and peanuts in a bowl , stir to combine, then set aside.
HEAT the remaining oil in a large frying pan on a high heat and, once it’s hot, add the broccoli and season with salt and pepper. Stir-fry for 5 minutes, until the broccoli is nicely charred and almost tender. Add three tablespoons of water, and cook, stirring constantly, over a high heat until tender.
TRANSFER to a large platter, spoon the peanut chilli oil over the top and serve at once.
