Place 2 peeled, halved and sliced red onions and 1 peeled and minced garlic clove (optional) in a frying pan over medium-low heat with a glug of oil. Allow the onions to caramelise, stirring often, about 20 – 30 minutes. Preheat the oven to 180°C. Line a baking sheet with baking paper and place 2 store-bought naan breads on the baking sheet. Slice 4 tomatoes, arrange the tomato slices on the naan and top each naan bread with 100g grated mozzarella. Place in the preheated oven, about 10 minutes, remove from oven and spoon the caramelised onions atop the pizzas. Return to the oven, 2 minutes. Season with salt and freshly ground black pepper to taste.
