• We all love classic chocolate brownies, but what if we told you that you could enjoy this treat in a red velvet version? Hit the sweet spot this Valentine’s Day with our irresistible red velvet brownies.

    Red velvet brownies

    Ingredients

    • 2 cups sugar
    • 1 cup oil
    • 1 tsp vanilla essence
    • 4 eggs
    • 1 cup flour
    • ¾ cup cocoa
    • ½ tsp baking powder
    • Pinch salt
    • ⅓ cup chocolate chips
    • 2 tsp red food colouring
    • Cream cheese icing
    • 200 grams cream cheese
    • 60 grams butter , at room temperature
    • 1 cup icing sugar
    • ½ tsp vanilla essence
    • 3-5 tbsp milk

    Instructions

    The brownies

    PREHEAT the oven to 180℃. Grease and line a square baking tin.

    PLACE sugar, oil and vanilla essence in the bowl and beat until combined. Add eggs one by one, beating well after each addition to create a light, airy mixture.

    SIFT in flour, baking powder and salt and mix until just combined. Mix in food colouring. Fold through chocolate chips.

    POUR the batter into the tin and bake for 35-45 minutes. Remove from the heat and allow to cool completely. Meanwhile make the icing.

    ONCE cool, remove from the tin and cut into squares. Drizzle Icing over the brownies and serve.

    Cream cheese icing

    COMBINE the cream cheese and butter together in a bowl and beat them both together until smooth.

    SIFT in the sugar and mix it in until until smooth

    ADD the vanilla and mix until incorporated.

    CHECK the consistency of your glaze. If you want a more runny glaze, add 1-2 tablespoons of milk until the desired consistency is reached.

    If you want a thicker glaze, or add too much milk, you can add a little more powdered sugar to thicken it up again.
