Chargrilled eggplant
The perfect braai side to cater to your vegetarian guests!
PREP TIME 10 min | COOK TIME 10 min | SERVES 4
INGREDIENTS
- 3 (1.3 kg) eggplants
- Olive oil cooking spray
- ¼ cup olive oil
- 2 tbsp balsamic vinegar or red wine vinegar
- 1 garlic clove, minced
- ¼ cup parsley leaves
METHOD
PREHEAT a chargrill pan over high heat. Cut eggplant into 5mm rounds on a slight diagonal. Spray eggplant with olive oil spray and season with salt. Cook eggplant, in batches, for 4 minutes on each side or until tender and grill marks appear. Arrange eggplant on a platter
WHISK olive oil, vinegar and garlic; drizzle over eggplant. Serve topped with parsley.
FOOD TEAM TIP: These also make a great vegetarian option at your next braai.
