    Light a generous wood fire to make hot coals. Make a well in the centre and place 12 – 15 white onions in the well. Cover the coals and allow to cook for 10 – 12 minutes. Remove from the coals and serve the warm onions with a squeeze of lemon, crème fraîche, Gorgonzola and lumpfish roe.
