• Cheese with figs, ginger biscuits and fynbos honey

    Ingredients

    • GINGER BISCUITS
    • 120g butter
    • 200g white sugar
    • 15ml golden syrup
    • 1 egg
    • 230g cake flour
    • 5ml baking powder
    • 15ml ground ginger
    • 10ml mixed spice
    • 3ml baking soda
    • soft white rind cheese, to serve
    • ripe fresh figs or grapes, to serve
    • fynbos honey, to serve

    Instructions

    Preheat the oven to 180ºC.

    Cream together the butter and sugar. Add the golden syrup and the egg, and mix thoroughly.

    Add the flour, baking powder, ginger, spice and baking soda.

    Roll into small balls and place on a lined baking tray, allowing room to spread. Do not flatten! Bake for 15 minutes.

    Serve with ripe soft white rind cheese, ripe fresh figs or grapes and a drizzle of fynbos honey.
