• In need of a quick snack? This coconut, papaya & macadamia bowl is not only delicious, but it also won’t take you six hours to prepare!

    INGREDIENTS

    • 2 small papayas
    • 2 cups coconut yoghurt
    • 1⁄2 cup macadamia halves, roasted
    • 2/3 cup flaked coconut, toasted
    • 1 Tbsp. finely grated lime zest
    • Lime wedges to serve

    CUT papayas in half lengthways and scoop out the seeds.

    SPOON coconut yoghurt into the papaya hollows. Sprinkle with macadamias, flaked coconut and zest.

    SERVE immediately with lime wedges.

    TIP: Sprinkle some home-made muesli on top of the yoghurt to make this recipe more filling and to add a crunch.
