    Egg-shaped vanilla butter biscuits

    Serves: Makes about 20
    Cooking Time: 30 mins

    Ingredients

    • 190g butter
    • 150g castor sugar
    • 2,5ml (½ tsp) vanilla paste
    • 300g (2½ cups) cake flour
    • 2 large eggs
    • 750g ready-to-roll icing
    • blue food colouring
    • yellow food colouring
    • 10ml (2 tsp) icing sugar
    • 3ml water

    Preheat the oven to 180°C and line a baking tray with baking paper.

    Cream the butter, sugar and vanilla paste together. Add the flour and eggs and mix until it forms a dough. Knead the dough for 2 minutes, cover with plastic wrap and chill in the fridge for 20 minutes.

    Roll the dough out onto a lightly floured work surface and cut out egg shapes using a cookie cutter. Place on the baking tray and bake until golden, about 15 minutes. Remove from the oven and set aside to cool.

    Divide the icing into two. Rub a little food colouring into each half and knead until the colour is mixed into the icing.

    Dust a work surface with icing sugar and roll out the blue icing. Roll the yellow icing into little balls and place them on the blue icing. Roll the yellow balls into the blue icing to form egg-shaped dots. Cut out shapes to fit the biscuits.

    Mix the icing sugar and water together to form a paste. Lightly brush the tops of the biscuits with the mixture. Lay the icing over the biscuits and leave to dry.
