• Ginger ale & citrus Pimm’s punch

    Bringing the spice with this citrus Pimm’s punch.

     PREP TIME 15 min + refrigeration | SERVES 8

     

    INGREDIENTS

    • 125 g strawberries, sliced thinly
    • 1 orange halved, thinly sliced
    • 1 lime, thinly sliced
    • 700 ml Pimm’s No 1
    • 1 lebanese cucumber 
    • 1.25 litre chilled dry ginger ale
    • 1 cup fresh mint leaves

     

    METHOD

    PLACE strawberries, orange and lime in a large serving jug. Add Pimm’s; stir to combine. Cover; refrigerate 3 hours or overnight.

    JUST before serving, cut cucumber into very thin slices on the diagonal and add to the jug. Stir in ginger ale and mint. Serve over ice.
