Honey and thyme caramelised figs are a wonderful fruity pudding. Figs have a natural softness that’s divine when coated in a layer of hard sugar. Thyme adds a refreshing lightness and you can’t go wrong with a yummy scoop of creamy vanilla ice cream.
Honey and thyme caramelised figs
Ingredients
- 20ml (4 tsp) butter
- 300g figs, halved
- 15ml (1 tbsp) brown sugar
- 15ml (1 tbsp) honey
- 30ml (2 tbsp) fresh cream
- seeds from ½ vanilla pod
- 2 sprigs of fresh thyme, leaves only
- vanilla ice cream, to serve
- 60ml (¼ cup) peanut brittle, crushed, to serve
Instructions

Heat the butter in a hot pan, add the sliced figs and toss to combine. Stir in the sugar and honey, and allow to caramelise over medium heat for 1 minute.

Stir in the cream, vanilla seeds and thyme, and allow to bubble away for 30 seconds.

Add a scoop of vanilla ice cream to serving bowls and spoon the warm figs and sauce on top.

Scatter crushed peanut brittle on top for added texture and serve immediately.
