How to: Homemade Father’s day chilli sauce
Guaranteed to spice things up this Father’s Day ,nothing says I love you more than this simple, hassle-free, homemade with love chilli sauce. Its the perfect DIY Dad’s day gift .

INGREDIENTS
- 2 red peppers
- 1 1/2 red onion , finely chopped
- 6 garlic cloves, peeled and finely chopped
- 2 cm piece ginger, peeled and finely chopped
- 1 cup of red chillies, steam removed and roughly chopped
- 3 tomatoes, skin removed and chopped
- 3 tbsp olive oil
- 1 lemon, juiced and zested
- ⅓ cup red wine vinegar
- 3 tbsp sugar
- 1 tbsp salt or to taste
- 1 tbsp dried oregano
- 2 bay leaves
- 1 tbsp paprika
METHOD
CHAR peppers over an open flame until well blistered and soft. Transfer into a bowl and cover with cling film. Allow to sweat for 5-10 minutes.
REMOVE cling film and peel off the skins. Deseed the peppers and discard the seeds.
ROUGHLY chop the red peppers and place them into the a food processor or a blender along with the remaining ingrdients . Blend on high for 2-3 minutes until slightly chunky or until desired consistency.
TRANSFER the mixture into a pot and bring to the boil over a high heat. Reduce the heat to medium and simmer for 20-30 minutes until reduced. Stirring every 10 minutes to prevent burning.
AFTER 20 minutes, check the seasoning and adjust. The sauce should be well balanced with a good kick of spice and sourness from the lemon and vinegar.
POUR mixture into sterilised jars and allow to cool at room temperature. Transfer it into the fridge and keep fro up to 2 weeks.
<FOOD TEAM TIP> Feel free to adjust the seasoning to you liking by playing around with the balanced between sweet, salty and sour ( and spicy) . Watch out for your eyes! When done topping the chillies, rinse your hands off with some high proof liquor such a vodka or with some rubbing alcohol.
