• 2007-08-06 09:05:26A delicious balance of lemon – freshly squeezed, sharpened in vodka and sweetened in limoncello liqueur. A wonderful dessert at the end of a winter meal.

    Lemony sorbet cocktail

    Serves: 2

    Ingredients

    • 75ml lemon vodka, chilled
    • 25ml schnapps, chilled
    • 50ml limoncello liqueur, chilled
    • 100ml fresh lemon juice
    • 50ml vanilla castor sugar
    • 6 – 8 ice cubes
    • 2 strips lemon zest, finely diced
    • 1 vanilla bean, to garnish

    Instructions

    Using a jug or clean glass jar with a lid, pour in the lemon vodka, schnapps, limoncello, lemon juice and vanilla sugar and stir or shake until the sugar has dissolved.

    Pour the ice into a liquidiser and blend until reduced to crystals. Add the lemon vodka mixture and give it all one quick whiz to combine.

    Remove the canister from the liquidiser, stir in the diced lemon zest, divide the mixture between 2 glasses and serve immediately.
