• Marinated olives are delicious as a snack with crusty chunks of homemade bread.

    Marinated olives

    Serves: 6 - 8
    Cooking Time: 1 hr

    Ingredients

    • Chilli, orange and garlic black olives

    • 430g black olives
    • 5ml fresh bird’s-eye chilli, seeded and sliced
    • 2 garlic cloves, crushed
    • zest and juice of 1 orange
    • 50ml oil
    • Sweet green olives with basil, lemon and sugar

    • 430g green olives, drained
    • juice and zest of 1 lemon
    • 15ml sugar
    • 50ml extra virgin olive oil
    • 4 basil leaves, shredded
    • Roasted black olives with fennel and orange

    • 430g black olives, drained
    • juice and zest of 1 orange
    • 15ml sugar
    • 5ml dried fennel seeds
    • fresh bread, to serve

    Instructions

    For the chilli black olives, combine the ingredients and marinate for about 1 hour.

    For the sweet green olives, combine the ingredients and marinate for about 1 hour.

    For the roasted black olives, preheat the oven to 200°C. Combine the ingredients in a roasting tray and bake for 10 minutes, stirring once or twice.

    Serve the marinated olives with fresh bread.

    Notes

    Cook's tip: Marinate the olives overnight for the best results.
