Masala pineapple skewers with coconut dipping sauce
Ingredients
- Coconut dipping sauce
- 1 cup coconut yoghurt
- 1-2 limes zested and juice
- 1 tbsp honey
- 1 tbsp freshly chopped mint
- Pineapple and mango skewers
- 1 tsp kashmiri chili powder
- ⅔ cup white sugar
- ¼ cup chilli powder
- 1 tsp salt
- 1-2 pineapples, peeled and cut into cubes or wedges
- To serve,
- Toasted coconut flakes, optional
Instructions
Coconut dipping sauce
COMBINE all the ingredients together in a bowl and mix well.
Pineapple and mango skewers
COMBINE all the spice,sugar and salt together in a bowl and mix well
SKEWER you pineapple and mangos
Sprinkle spice mixture over each skewer in the spice until generously covered on all sides.
