• Mulled wine goes back to the Middle Ages when wine was inconsistent and mostly terrible. Apple cider, not as much. Making it a hot cocktail is great for a sniffle and it this mulled apple iced tea can be served as a refreshing drink in summer. 

    Mulled apple iced tea

    Serves: 4
    Cooking Time: 30 minutes + cooling time

    Ingredients

    • 100ml water
    • 3 apple tea bags
    • 1 mint tea bag
    • 250ml (1 cup) honey
    • 4 cinnamon sticks + extra, to garnish
    • 15ml (1 tbsp) whole cloves
    • 2 oranges, halved
    • ice, to serve (optional)
    • fresh mint, to garnish

    Instructions

    In a saucepan over high heat, bring the water to a boil. Remove from heat, add all of the tea bags and allow to steep, 10 minutes.

    Remove the tea bags and add the remaining ingredients. Allow to simmer over low heat, stirring occasionally, 10 minutes.

    Remove from heat and allow to cool. Strain off the solids (discard these), bottle and refrigerate.

    Pour into chilled stemmed glassware with ice, if desired. Garnish with cinnamon sticks and mint to serve.

    Notes

    This can also be reheated for a chilly evening.
