• Happy Valentine’s Day, foodies!  Celebrate love the effortless way with our no-bake mini cheesecakes! Perfect for a last-minute treat or when you’re stumped for dessert ideas. These little delights are easy to make, totally delicious, and guaranteed to spread the love with every bite!

    No fuss no bake mini-cheesecakes

    Serves: 12-16
    Total Time: 2-4 hours

    Ingredients

    • 1 packet Tennis biscuits
    • ⅓ cup butter, melted
    • Cupcake liners
    • Filling
    • 250 grams cream cheese
    • 3 tbsp icing sugar, sifted
    • 1 tsp lemon juice
    • ½ tsp vanilla essence
    • 1 cup whipping cream, whipped
    • To serve
    • Berry coulis
    • Blueberries
    • Strawberries

    Instructions

    CRUSH the tennis biscuits until a fine crumb. Add the melted butter and mix to combine.

    FILL a muffin tin with cupcake liners. Add 1-2 teaspoons of the biscuit crumb to the cupcake liners and press to compact. Transfer to the freezer while you make the filling.

    USING an electric mixer, beat the cream cheese until softened. Add in the icing sugar, lemon juice and vanilla essence and mix to combine. Fold in whipped cream.

    REMOVE the bases from the freezer and spoon the filling on top of and smooth. Transfer to the fridge or freezer and allow to set for 2-4 hours.

    REMOVE the cheesecakes from the cupcake liners and garnish with your favourite berry sauce or fruit.

    Notes

    For the strawberry sauce, simply chop up ¾ cup of strawberries and add it to a pot. Add 2-3 tablespoons of water and about 3 tablespoons of sugar. Bring to a boil over a high heat and cook until syrupy. Remove from the heat and allow to cool completely before serving it with your cheesecake.
