• Pizza scrolls

    Get creative with the toppings and make them to your liking!

     

    TOTAL TIME 40 min | MAKES 9 

     

    INGREDIENTS

    • 2 cups self-raising flour
    • ½ tsp bicarbonate of soda 
    • 1 tsp salt
    • 50g cold butter, chopped 
    • ¾ cup buttermilk 
    •  2 tbsp pizza sauce
    • 2 tbsp barbecue sauce
    • ½  small red onion, thinly sliced 
    • ½  small green bell pepper, thinly sliced 
    • 100g sliced salami, coarsely chopped
    • ½ cup tinned pineapple pieces, well-drained, coarsely chopped 
    • ⅓ cup kalamata olives, drained, sliced 
    • 1 cup pizza cheese 

     

    METHOD

    PREHEAT the oven to 200°C. Oil a 22cm square cake pan.

    SIFT flour, bicarb and salt into a bowl. Rub in butter with your fingertips, then add enough buttermilk to form a soft, sticky dough. Lightly knead the dough on a floured surface until smooth. 

    ROLL dough into a 30cm x 40cm rectangle. Spread with combined sauces and sprinkle over onion, bell pepper, pepperoni, pineapple, olives and half the cheese. Roll the dough into a tight log from the long side. Using a serrated knife, trim the ends and cut the log into 9 even pieces.

    PLACE pizza scrolls, cut-side up, in the prepared pan and sprinkle with remaining cheese.

    BAKE scrolls for 25 minutes or until cooked through. Delicious enjoyed warm or cold.

     

    TOP TIP: The pineapple must be drained well and patted dry with paper towel otherwise it will make the scrolls soggy.
