    Ingredients

    • 4 fresh pineapple slices, cut into chunks
    • 4 basil leaves, plus 1 to garnish
    • 20ml vanilla syrup
    • 20ml lime juice
    • 50ml gin
    • 10ml pineapple juice
    • chilled lemonade, to top up
    • 6 ice cubes
    • 1 pineapple slice, to garnish

    Instructions

    In a cocktail shaker or glass jar with a secure lid, combine the pineapple, basil, vanilla syrup and lime juice. Muddle together using a wooden muddle or the back of a wooden spoon. Add the gin, pineapple juice and 3 ice cubes, and shake to combine. Strain through a fine meshed sieve into a highball glass. Top up with remaining ice cubes and chilled lemonade. Garnish with a pineapple slice and basil leaf, and serve.
