• Sparkling rosé and strawberry ice lolly cocktails

    HANDS-ON TIME 10 min | TOTAL TIME 6 hr 10min | SERVES 8

    These sparkling rosé and strawberry ice lolly cocktails will add some nostalgic fun to your next cocktail party! Make the ice lollies far in advance so that they’re ready to serve to your guests.

     

     

    INGREDIENTS

    STRAWBERRY ICE LOLLIES

    • 600 g strawberries, hulled and chopped
    • ¼ cup white sugar
    • 1 tbsp lemon juice

    TO SERVE

    • 2 L sparkling rosé
    • Edible flowers, to garnish

     

    METHOD

    STRAWBERRY ICE LOLLIES

    PLACE strawberries, sugar and lemon juice in a blender or food processor and blend until smooth. If necessary, stop after a few seconds to scrape down the sides.

    POUR the puree into 8 ice lolly moulds and insert an ice lolly stick into each.

    FREEZE for 4–6 hours or until frozen solid.

    TO SERVE

    POUR chilled sparkling rosé into 8 individual glasses. Just before serving, place a strawberry ice lolly into each glass and garnish with edible flowers.

    SERVE immediately and enjoy.

    FOOD TEAM TIP: Use non-alcoholic sparkling wine instead of the sparkling rosé for an alcohol-free drink.
