Sweet potato shoestring fries
Ingredients
- 2 large sweet potatoes, cut into matchsticks
- Sunflower oil, to deep-fry
- Sea salt flakes, to season (optional)

Place the sweet potato matchsticks in water if not using straight away. Dry the fries between two clean tea towels to absorb moisture.

Heat the oil in a deep-fryer or deep pot to 180°C and fry the matchsticks in batches until crisp, 8 – 10 minutes. Remove from oil with a slotted spoon and drain on paper towel. Season with sea salt flakes, if desired, and serve hot.
