• Once you’ve tried this ingenious folding technique, you’ll never go back to boring ol’ quesadillas again!

    INGREDIENTS

    • 6 tortilla wraps
    • cup basil pesto
    • 360 grams mozzarella, grated
    • 200 grams baby spinach
    • 2 red peppers, sliced
    • 300 grams mushrooms, sliced and fried
    • 2 Tbsp. butter 

    METHOD

    PLACE a wrap on a clean work surface and cut a line from the middle of the wrap down to the bottom edge, creating a flap.

    VISUALISING the wrap in four quarters, spread one-sixth of the pesto in one quarter and place the mozzarella in the next. Arrange the spinach in the third quarter and place the peppers in the fourth. Layer one-sixth of the mushrooms on top of the pesto and rotate the wrap so that the slit is in front of you. 

    FOLD the wrap into a triangular shape starting by folding the bottom left quarter over the top left quarter. Then fold it over the top right quarter and down to the bottom right. Repeat with the remaining wraps.

    MELT some butter in a pan over medium heat. Fry the wraps, one at a time, for 1-2 minutes a side or until golden and crispy. 

    TIP: The fun part about viral trends is that people try all sorts of flavour combos! Experiment with an all veggie wrap, caramelised onions, leftover roast beef and even different types of cheese.
