    Toasted meringue-dipped strawberries and bubbly

    Ingredients

    • 2 large egg whites, at room temperature
    • 110g castor sugar
    • 2,5ml (½ tsp) vanilla extract
    • 200g strawberries, washed and dried well

    For the meringue, place the egg whites in the bowl of an electric mixer (ensure the bowl and whisk attachment are scrupulously clean and dry), then whisk the egg whites to soft peak stage.

    Slowly start adding the castor sugar until the meringue is thick, glossy and holds a stiff peak. Whisk in the vanilla.

    Dip the strawberries into the meringue and then, using a blow torch (or a candle) toast the meringue until golden. Serve with chilled bubbly.

    Notes

    Cook's tip: Make the meringue just before serving to avoid it collapsing.
