Halloumi and cherry tomato shortcrust pastry pizza:
Ingredients

- 400g TODAY® Original Shortcrust Pastry, thawed
- 1 egg, beaten
- ¼ cup passata
- 250g halloumi, sliced
- 1 Tbsp (15 ml) olive oil
- 250g cherry tomatoes, roasted
- 10 sprigs of thyme

Method
1.) Preheat the oven to 200°C. Unroll the Today® Original Shortcrust Pastry and place onto a lined baking tray, using a knife score the edge of the pastry. Brush with egg and bake for 20 minutes.
2.) Heat a griddle pan over a high heat, drizzle halloumi slices with olive oil and grill for 1 minute on each side. Remove and set aside.
3.) Top the baked pastry with passata, halloumi, cherry tomatoes and thyme. Return to the oven for 5 minutes. Remove from the oven and enjoy with a side salad or on its own.
Cheat’s Paste – De – Nata:

For the custard
- 3 Tbsp (45ml) flour
- 1 ¼ (375ml) cup milk
- 250g sugar
- 1 Tbsp (15ml) lemon juice
- 2/3 cup of water
- 1 cinnamon stick
- ½ tsp (2.5ml) vanilla essence
- 6 large egg yolks

Method
1.) Preheat the oven to 220°C.
2.)Whisk together ¼ of the milk and the flour in a large bowl.
3.) Bring the sugar, lemon juice, water and cinnamon to a boil in a small saucepan, and simmer for 3 minutes. Do not stir.
4.) Heat the remaining milk, do not simmer and whisk slowly into the flour mixture. Remove the cinnamon from the sugar syrup and slowly add to the milk mixture, whisking continuously. Whisk in the vanilla and egg yolks. Set aside to cool.
5.) Roll the pastry lengthways and cut the pastry roll into 12. Using a rolling pin press down on the scrolled side and shape it into a circular disc. Use these to line a muffin tin.
6.) Pour the cooled custard into the pastry tarts and bake in the preheated oven for 15 – 20 minutes or until the pastry is cooked and custard set.
7.) Remove from and oven and allow to cool. Sprinkle with icing sugar, and a dusting of cinnamon and enjoy.
