Preheat the oven to 180°C. Line a baking tray with baking paper. Cut the pastry into 7cm x 7cm squares. Place 2 plum quarters at two opposite corners, brush with jam and fold the opposite corners over to meet in the middle. Brush the top of the pastry with more jam and sprinkle with pine nuts. Bake until the pastry is lovely and golden, about 10 minutes. Dust with icing sugar before serving.Mini plum Danish pastry
