Preheat the oven to 180°C. Mix the honey, sherry and lemon juice together. Put the salmon in a shallow bowl, coat well with the honey mixture and refrigerate for 10 minutes. Season the salmon and roast on a baking tray for about 15 minutes. Heat the oil in a frying pan and lightly sauté the spring onions and mange tout, adding the sesame seeds and coriander just before the greens are done.
