A zesty and fresh pickle complements the oily fish perfectly.
Smoked salmon spoons
Ingredients
- 6 radishes
- 1 lemon
- 5ml (1 tsp) Maldon salt
- freshly ground black pepper
- smoked salmon
- fresh dill, to serve

To create a quick radish pickle: julienne radishes and place in a small bowl, add the juice of 1 lemon, Maldon salt and freshly ground black pepper, cover and chill for 20 minutes. Curl some smoked salmon into mini serving spoons, top with some of the radish pickle as well as the juice, add some finely chopped red and garnish with fresh dill to serve.
