• Butter with a kick – a brandy butter. Perfect for serving with a Christmas pudding. 

    Brandy butter

    Serves: 200ml
    Cooking Time: 20 mins

    Ingredients

    • 100g butter, softened
    • 100g icing sugar
    • rind and juice of 1 orange
    • 30ml – 45ml (2 tbsp – 3 tbsp) brandy

    Instructions

    Beat the butter until light and fluffy, slowly adding the icing sugar a little at a time.

    Fold in the orange rind, juice and brandy.

    Spoon the butter into a bowl and refrigerate to chill. Serve alongside Christmas pudding.
