This stuffed brie and fig French toast with maple bacon is the perfect balance of a sweet and savoury breakfast delight!
Rich, creamy Brie pairs beautifully with the sweetness of fig preserves, all nestled between slices of fluffy brioche, pan-fried to golden perfection. The pièce de résistance? Crispy, caramelised maple-glazed bacon that adds a smoky-sweet crunch to every bite.
Drizzle with warm maple syrup for an extra touch of indulgence! Be sure to double the recipe for hungry eaters.
If brioche is not available, you can use a white sandwich loaf instead.
Stuffed Brie and fig French toast with maple bacon
Ingredients
- 6 – 8 strips of streaky bacon
- 45ml (3 tbsp) maple syrup, plus extra for serving
- 5 figs, sliced into rounds
- 4 slices Brie
- 4 slices ready-made brioche
- 2 large eggs
- 5ml (1 tsp) sugar
- seeds of ¼ vanilla pod
Instructions
Preheat the grill. Place the bacon on a baking tray and grill for a few minutes until crisp. Brush the strips with the maple syrup on both sides and place back under the grill fora minute or two until crisp, golden and sticky.
Pack a layer of figs topped with the Top each with anotherslice of brioche.
Whisk together the eggs, sugar and vanilla. Heat a non-stick pan over medium heat and add a knob of butter. Carefully dip the stuffed brioche sandwiches in the egg mixture, allowing them to soak up as much as possible without becoming too soft.
Gently fry for a minute or two on each side until golden.
Serve with the maple-glazed bacon and be sure to have some extra syruphandy for dunking. Brie on two of the brioche slices.
Notes
If brioche is not available, use white sandwich loaf instead.
