Time: 30 mins + 30 mins, to cool
In a medium pot, combine 1 x 385g tin condensed milk, 30ml (2 tbsp) fish sauce, 30ml (2 tbsp) soya sauce, 10ml (2 tsp) sesame oil, 2,5ml (½ tsp) ground turmeric, 5ml (1 tsp) ground coriander, 5ml (1 tsp) ground cumin, 5ml (1 tsp) minced fresh ginger and 1 sliced red chilli. Heat a splash of olive oil in a griddle pan over medium-high heat and grill the skewers, turning occasionally, until the pork is just cooked through, 4 minutes. Season with salt and freshly ground black pepper and serve scattered with fresh coriander.
