Potato and sweet potato salad with honey mustard dressing
A sweet and refreshing side
PREP TIME 15 min | COOK TIME 20 min |SERVES 4 | VEGETARIAN
INGREDIENTS
- 800g potatoes, peeled, coarsely chopped
- 350g sweet potato, peeled coarsely chopped
- 150g green beans
- 2 spring onions, thickly sliced
For the honey mustard dressing
- ⅔ cup mayonnaise
- 1 tbsp water
- 2 tsp honey
- 2 tsp wholegrain mustard
METHOD
SEPERATELY boil or microwave the potatoes, sweet potatoes and beans until tender, drain. Place potato and sweet potato together in a serving bowl, rinse the beans under cold water.
For the honey mustard dressing
ADD mayonnaise, water, honey and mustard to a bowl and whisk to combine.
To assemble
ADD beans, onion and dressing to the serving bowl, toss gently with the potatoes to combine and serve.
FOOD TEAM TIP: This dish is perfect as a side to a dinner or even as a school lunch.
