• Hake skewers with root vegetable slaw

    A yummy and healthy dinner idea!

    PREP TIME 35 minutes | COOK TIME 10 minutes | SERVES 4

     

    INGREDIENTS

    For the root vegetable slaw

    • ½ celeriac, peeled and cut into matchsticks
    • 1 red apple, cut into matchsticks
    • 1 carrot, cut into matchsticks
    • 250 g cabbage, finely shredded
    • 2 tbsp finely chopped chives
    • ¼ cup chopped parsley
    • ⅓ cup pecans, coarsely chopped
    • ⅓ cup buttermilk
    • ⅓ cup olive oil
    • 2 tsp lemon juice

    For the fish

    • 1 kg hake fillets
    • 16 loose fresh bay leaves and 8 bay leaf stems 
    • 1 tbsp olive oil
    • 1 lemon, cut into wedges

     

    METHOD

    For the root vegetable slaw

    COMBINE all the ingredients together in a bowl and toss to combine. Season well and set aside.

    For the fish

    CUT hake into 16 even pieces and thread two pieces of fish onto bay leaf stems. Brush each piece of hake with oil and season.

    COOK fish on a grill for 3 minutes on each side until just cooked through.

    To serve

    SERVE hake with lemon wedges and root vegetable slaw

     

    FOOD TEAM TIP: If you can’t find bay leaf branches for this recipe, simply substitute for wooden skewers.
