• Roasted grape and cream cheese bruschetta is not your conventional starter, but it sure is a delicious flavour combo to try!

    Roasted grape and cream cheese bruschetta

    Ingredients

    • The roasted grapes
    • 4 tbsp olive oil
    • 2 tbsp balsamic vinegar 
    • 1½  tsp brown sugar
    • ½  tsp coarse sea salt 
    • ½ tsp black pepper 
    • 500 g seedless red or black grapes, picked
    • The cheese
    • 250 g cream cheese
    • Zest of 1 lemon
    • The bruschetta
    • ½ loaf farm-style bread, thickly sliced 
    • 2 tbsp olive oil
    • 6 basil sprigs

    Instructions

    For the roasted grapes

    Whisk together the olive oil, vinegar, sugar, salt and pepper.

    Toss through the grapes and allow to marinate for 30 minutes.

    Preheat oven to 200°C. Spread the grapes out onto a baking tray and roast for 20–25 minutes, until they are just bursting.

    For the cheese

    Whisk together the cream cheese, lemon zest and some salt and pepper, until fully combined and the mixture is soft and spreadable.

    For the bruschetta

    Preheat the grill.

    Brush the bread slices with olive oil and grill until toasted.

    Spread with cream cheese, top with roasted grapes and garnish with basil. Serve immediately.
