We’re serving up a hearty and delicious traditional hardbody chicken stew, also known as uMleqwa and Mukokorishi. This recipe has stood the test of time, filling homes with warmth and flavour for generations.
Hardbody chicken
Ingredients
- • 1 Chicken, cut in pieces
- • 1.5L Hot water
- • 4 Bay leaves
- • 1 Onion (diced)
- • 2 Chicken stock cubes
- • 1 Tbsp Curry powder)
- • 1 Tsp Paprika
Instructions

In a large pot, add chicken pieces, bay leaves, 1 stock cube and 1L water and boil the chicken until there is no water left.

Brown the chicken with the excess fat in the pot, then add onion and spices and sauté for 2-3minutes.

Add the remaining stock cube and water then cover pot with lid and leave it to cook on low to medium heat until the sauce has reduced and thickened.
Notes
Tip: Serve with pap.
