• A great easy recipe to start off the upcoming weekend. This chicken and rice is loaded with goodness and delectable flavour even your kiddies will love it.

    Slow-cooked chicken and rice

    Serves: 4-6
    Cooking Time: 1 hour

    Ingredients

    • 1 tbsp olive oil
    • 1 tbsp butter
    • 2 garlic cloves , minced
    • 1 onion, chopped
    • 3 carrots, halved then cut into 1cm slices
    • 3 celery ribs, cut into 1 cm slices
    • 5 tsp chicken stock powder
    • 1/2 tsp dried parsley
    • 1/2 tsp dried thyme, optional
    • 1/4 tsp black pepper , finely ground
    • 6-8 cups water
    • 600 grams, skinless chicken thighs,
    • 1 cup white rice, uncooked
    • 1 tbsp finely chopped parsley, garnish

    Instructions

    PLACE oil and butter together in a large pot over medium high heat.

    ADD onion and garlic, cook for 5 minutes until onion is translucent.

    ADD carrots and celery, stir for 1 minute.

    ADD stock powder, dried parsley, thyme, pepper, water. Stir, then add chicken.Cover with lid, simmer on medium low for 30 minutes. Remove the lid, add rice. Stir, cover, simmer for 15-20 minutes.

    REMOVE the soup from the stove.

    REMOVE the chicken into a bowl. Shred the chicken and then stir into soup.

    STIR in half the parsley, taste for salt and add if required.
