    Summer picnic series: Harissa mushroom skewers

    Serves: 4
    Total Time: 50 min

    Ingredients

    • 6-8 small skewers, soaked in water
    • 200g oyster mushrooms
    • 4 tbsp harissa
    • 1 tbsp honey
    • Juice of half a lemon
    • 1 tsp smoked paprika
    • ½ tsp garlic flakes
    • ½ tsp cumin
    • ½ tsp coriander
    • ½ tsp salt
    • Tzatziki
    • 1/2 cup plain yoghurt
    • 1/3 cucumber, grated and squeezed
    • 1 tbsp lemon juice
    • 1 tsp olive oil
    • 1 garlic clove, minced
    • 2 sprigs mint, chopped
    • To serve
    • Small pita breads

    Instructions

    MIX all the mushroom ingredients besides the mushrooms together in a mixing bowl

    TEAR the mushrooms into pieces then add them into the marinade. Mix well until evenly coated. Set aside to marinate for 30 minutes.

    THREAD the mushrooms onto skewers.

    COOK the mushroom skewers on a griddle pan or braai until charred on both sides

    Tzatziki

    COMBINE all the ingredients together in a bowl and mix well.

    SERVE mushroom skewers on top of the pita bread and topped with tzatziki.
