• Cape Town has definitely cooled down in the last few weeks. Rather than staying locked away indoors, it might be the best time to venture out. Loads of restaurants – both in the Cape and across SA – have some incredible winter specials from now until the end of August.

This winter, Chef Ryan Cole and the Salsify team will serve up a beautiful six-course tasting menu brimming with all the warmth and comfort suited to the colder weather.

“Winter calls for comfort food and nourishment. It’s a time when we all seek out hearty, wholesome and comforting ingredients and flavours,” says Chef Ryan, adding “We’re lucky to have such an abundance of beautiful winter produce to work with when creating this menu.”

Along with warmer and heartier flavours, in winter people tend to prefer quicker and shorter dining experiences, so the menu has been created with this in mind.

As with all of the cooking at Salsify, the menu draws inspiration from nature, both the land and sea by which Salsify is surrounded and features elevated takes on comforting flavours delivered through Cole’s exceptional, seasonally-driven cooking.

The menu features twists on classic comfort food, such as the chef’s play on onion soup, here served with bread dumplings and deeply flavourful shiitake broth, and a rich, tender pork belly which is served with fire roasted pumpkin and a roasted rice dashi.

In what has become a winter tradition of sorts at Salsify, the menu sees the return of the chef’s famed soufflé, this season, the pudding taking shape in the form of a kumquat and bergamot soufflé with toasted rice ice cream.

The menu is priced at R850.00 pp and is available for lunch and dinner from the 21st of May.

Bookings can be made via Salsify’s website, DinePlan or reception:
