Try this delicious creamy sundried tomato chicken ! Perfect for a fun dinner party with friends and family.
Sundried Tomato Chicken
Ingredients

- 4 chicken breasts
- 3 tbsp butter, divided
- Salt and pepper
- Oregano
- 1 red onion, finely chopped
- 4 garlic cloves, minced
- 100 grams diced bacon
- ½ packet sundried tomatoes in oil, finely chopped
- ¾ cup chicken broth
- ½ cup cream
- ½ cup parmesan cheese
- 1 baby spinach , stems removed
Instructions
THOROUGHLY season chicken breasts with salt, pepper, and oregano on both sides.
IN A LARGE skillet or frying pan, melt 2 tablespoons of butter with a bit of oil from the sun-dried tomatoes over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Transfer grilled chicken breasts to a plate and set aside.
ADD the remaining tablespoon of butter to the same pan. Cook onion, garlic, sun-dried tomatoes and bacon. Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.
ADD spinach to the mixture and continue cooking until wilted. Add the chicken breasts back to the pan and reheat for 2-3 minutes.
Notes
Serve this dish with some penne pasta or with mashed potatoes.
