WHAT YOU NEED
300ml water
200ml orange juice
2 tsp ground cinnamon
1 tsp ground nutmeg
2 tsp ground allspice
1 tsp coarse salt
zest of 1 orange
250g white sugar
250g treacle sugar
HOW TO DO IT
- In a small saucepan over high heat, bring the water, orange juice, spices and salt to the boil.
- Add the orange zest and sugars, reduce the heat and simmer, stirring, for 15 minutes.
- Remove from heat and allow to cool. Pour through a fine strainer/muslin cloth into a clean glass bottle, then seal and refrigerate.
