    Peanut brittle

    Ingredients

    • White sugar ½ cup
    • Water ¼ cup
    • Roasted peanuts, halved 50g
    • Sea salt flakes 1 tsp

    Line a baking tray with baking paper or a silicone mat. Place the peanuts in an even layer on the baking tray.

    Place the sugar and water in a pot over low heat. Cover with a lid and heat until the sugar has dissolved.

    Allow the mixture to boil until it turns a light amber colour; hold the pot handle and swirl the caramel around to get an even colour.

    Pour the caramel onto the peanuts and top with salt flakes. Set aside to cool completely.

    Additional tips:

    Use a Heavy-Bottomed Pan:

    This helps distribute heat evenly, reducing the chances of burning the sugar.

    Butter the Baking Sheet:

    Grease your baking sheet or use a silicone mat to prevent the brittle from sticking.

    Spread the Brittle Quickly:

    Once you pour the mixture onto the sheet, spread it out quickly with a spatula to achieve an even layer. The mixture will harden fast.

    Add Baking Soda for Lightness:

    A small amount of baking soda ( about 1/8-1/2 tsp) added at the end of cooking creates bubbles, making the brittle lighter and easier to bite into.

    Work in a Cool, Dry Environment:

    Humidity can affect the texture of your brittle, making it sticky. If possible, make peanut brittle in a cool, dry environment.

    Let It Cool Completely:

    Allow the brittle to cool completely before breaking it into pieces. This ensures it sets properly and breaks cleanly.

    Store in an Airtight Container:

    To keep the brittle crunchy, store it in an airtight container at room temperature. Moisture can make it soft and sticky.
