Kick it up a notch in the kitchen and transform your standard broccoli cheese into a hearty meal for the whole family!
Ingredients
- 50 grams broccoli, cut into florets
- 40 grams butter
- 2 Tbsp. flour
- 2 cups warm milk
- ½ cup grated Cheddar
- ½ cup shredded BBQ chicken
- 4 slices sourdough bread
- 1 Tbsp. olive oil
- 1 garlic clove, minced
- 1 Tbsp. lemon zest
- 2 Tbsp. chopped parsley, plus extra to garnish
- ½ cup grated parmesan
Instructions
PREHEAT oven to 220ºC. Oil a deep 2L oven-proof dish.
BRING a pot of water to the boil over a medium-high heat. Add broccoli and cook for 5 minutes, until tender. Drain and rinse under cold water. Set aside.
MELT butter in a pot over a medium heat. Add flour and cook, stirring, for 2 minutes until the mixture starts to bubble. Gradually pour in the milk, stirring until the mixture boils and thickens. Stir in the cheese, chicken and broccoli, then season with salt and pepper. Spoon mixture into the prepared dish.
TEAR bread into pieces and toss with the remaining ingredients in a bowl. Sprinkle bread mixture onto chicken and broccoli and bake for 20-30 minutes or until lightly browned. Sprinkle with extra parsley and serve.
TIP: To make the BBQ chicken, simply shred store-bought rotisserie chicken or grill chicken breasts and baste them with barbeque sauce.
