• Baked eggs with streaky bacon

    Ingredients

    • 12 slices streaky bacon
    • 4 sheets phyllo pastry
    • butter, melted, for brushing
    • 15ml (1 tbsp) ready-made caramelised onions
    • sea salt
    • 4 large eggs

    Preheat the oven to 200°C.

    Place the bacon on a rack on a baking tray and cook until crispy, about 10 minutes. Set aside and keep warm.

    Layer the phyllo sheets together, brushing between each layer with melted butter. Cut into 4 squares.

    Line the bases of 4 x 11cm metal pie tins with the phyllo squares. Spoon 5ml (1 tsp) of caramelised onions into the base of each case. Sprinkle with salt and place on a baking tray.

    Crack an egg into each case and bake in the oven until the egg is just set, about 5 minutes. Serve with the bacon and extra onions if desired.
