Burgers with attitude: get your hands on them now!

Bean burgers with hummus and cucumber
Ingredients
PATTIES
- 2 x 410g tins mixed beans, drained
- salt and freshly ground black pepper, to taste
- 1 large egg, lightly beaten
- 60ml (¼ cup) breadcrumbs
- 100g butternut, boiled
- and coarsely chopped
- 50g feta, crumbled
- olive oil, for frying
- 6 rolls, sliced
- 30ml (2 tbsp) hummus
- 1 tomato, sliced
- cucumber, sliced, to serve

For the patties, place the beans in a large mixing bowl, season and blitz with an electric hand blender until smooth. Mix in the rest of the ingredients and form into 6 patties.

Heat a little oil in a pan and fry the burgers until cooked and golden, about 10 minutes on each side.

Spread the inside of the rolls with the hummus. Top with a warm patty and a few slices of tomato and cucumber. Serve immediately.
