Preheat the oven to 180°C. For the pesto, place all the ingredients except the olive oil and seasoning into a blender. Blend on medium speed. While blending, slowly add the olive oil until you have a smooth paste. Add the seasoning. For the pizza, put the pastry discs on a baking tray and cook for about 5 minutes. Set aside to cool until needed. Spread the pesto onto each disc, top with tomatoes and mozzarella, and season. Top with a fried quail egg.
