This delightful creation features a crispy, golden pizza base layered with a rich tomato sauce and a generous spread of melted cheese. Topped with crispy bacon, fresh rocket, and perfectly cracked eggs that bake until set, each bite bursts with breakfast flavours.

    Finished with a sprinkle of fresh herbs and a touch of cracked black pepper, this breakfast pizza is hearty, satisfying, and sure to become a new family favourite.

    Breakfast pizza

    Serves: Makes 8 small pizzas
    Cooking Time: 40 mins

    Ingredients

    • 80g fresh rocket
    • 20g walnuts, roasted
    • 20g Parmesan, grated
    • 1 garlic clove, finely chopped
    • 80ml olive oil
    • salt and freshly ground black pepper, to taste
    • 400g puff pastry, cut into 8cm x 5cm discs
    • 50g rocket pesto
    • 100g Rosa tomatoes, quartered
    • 50g mozzarella, grated
    • 8 quail eggs, fried

    Instructions

    Preheat the oven to 180°C.

    For the pesto, place all the ingredients except the olive oil and seasoning into a blender. Blend on medium speed. While blending, slowly add the olive oil until you have a smooth paste. Add the seasoning.

    For the pizza, put the pastry discs on a baking tray and cook for about 5 minutes. Set aside to cool until needed.

    Spread the pesto onto each disc, top with tomatoes and mozzarella, and season. Top with a fried quail egg.

    Place on an oven tray and bake until done, about 5 minutes.
