We cannot get enough of these sweet and salty buttermilk waffles with crispy bacon and spiced maple syrup. It’s all of our dreams come true in one dish. In fact, it is bacon us quite crazy that we love this recipe this much! How much do we love it? A waffle lot! Okay, we’ll stop with the puns, but we definitely won’t stop making these scrumptious treats!
Buttermilk waffles with crispy bacon and spiced maple syrup
Ingredients
- 245g (1¾ cups) cake flour
- 30ml (2 tbsp) castor sugar
- 2½ tsp baking powder
- a pinch of salt
- 470g (1¾ cups) buttermilk
- 125ml (½ cup) melted butter, cooled to room temperature
- 2 eggs
- 10ml (2 tsp) vanilla extract
Syrup
- 125ml (½ cup) maple syrup
- 1 red chilli, seeds removed and slit
- crispy bacon, to serve
- flavoured butter, to serve
Instructions
Combine the flour, sugar, baking powder and salt in a large bowl, mix well and set aside.
Whisk together the buttermilk, butter, eggs and vanilla extract in a separate bowl. Add the wet ingredients to the dry ingredients and gently mix together.
Spray a waffle iron with cooking spray and ladle batter into the iron. Cook until crisp and golden, 3 – 4 minutes.
For the syrup, heat the maple syrup in a small saucepan with the slit chilli and leave to infuse.
5 Serve the waffles with flavoured butter, crispy bacon and spicy maple syrup.
Notes
Once cooked, these waffles store well in the freezer for up to 3 months. Simply remove from the freezer and pop into a hot oven or toaster for 1 minute.
